AUNT MEI’S RECIPES

In this section there are some of our best recipes, in order to be able to enjoy them at home and with friends. The tradition of Orvieto!

Birds nests with pecorino cheese and warm honey

Ingredients:

  • FRESH PASTA SFOGLIA (LASAGNA)
  • 10 SLICES OF FRESH PECORINO CHEESE (3 MM THICK)
  • BESCIAMELLA
  • MILLEFIORI HONEY
  • PREPARE BESCIAMELLA FOR 4 PEOPLE(50 GR OF BUTTER – 50 GR OF FLOUR – 1/4 MILK – 1/4 WHIP CREAM – SALT)
  • WE PERSONALLY CHOOSE NOT TO ADD CINNAMON

In a little pot, let the butter melt with medium fire. Then add flour mixing with the spoon. Pour cold milk all at once keeping stirring until it does not start boiling. Put salt and lower the flame to cook for about 20 minutes, mixing every once a while. Remove the pot from the stove, check the salt and the besciamella density. If it is too dense, add milk. If too liquid and some butter dipped in flour.

BIRDS NEST PREPARATION

Roll a layer of lasagna 40×40 cm earlier dipped into salty water for 1 minute. Put the layer on a clean and dry surface. Put on the layer besciamella and sliced pecorino.
Roll on one side and cut into sections.
Place the nests on a tray so to fill the whole tray.
Pour on top very little liquid cream, so that the pasta is not too dry.
Put in the oven for about 20 minutes. The oven has to be pre-heated to 250 Celsius.
When the nests get a color, take them out, add a little Millefiori honey and put them back into the oven for another minute.
Put them onto plates, add Reggiano Parmesan cheese and serve hot.

 

Fresh fava beans scafata with fenil

Ingredients:

  • ONION
  • TOMATO
  • EXTRA VIRGIN OLIVE OIL
  • SPICY PEPPER
  • FRESH FAVA BEANS
  • BIETA
  • PORK CHEEK BACON
  • WILD FENIL
  • SALT

Caramelize onion with extravirgin olive oil, pork cheek pancetta, and wild fenil.
Add fava beans and some diced fresh tomatoes (also pachino tomatoes work).
Cook fava beans for 10 minutes, add veggies (like spinach) and a glass of boiling water, enough salt and some spicy pepper.
Keep cooking with medium fire until the veggies are cooked.
Our soup is ready to be served.
Serve it with a slice of toasted garlic bread, a hint of pecorino cheese and a little extravergin olive oil.

Carbonara pasta with fava beans and bacon

Ingredients:

  • BROKEN DRIED FAVA BEANS
  • PORK CHEEK BACON
  • ONION
  • EXTRA VIRGIN OLIVE OIL
  • FRESH OMBRICHELLI PASTA
  • FRESH FENIL
  • PARMIGIANO CHEESE
  • BLACK PEPPER

FAVA BEANS CREAM PREPARATION

After washing the fava beans, let them boil with 50% amount of water, add fenil, a clov of garlic and salt.

When water is dried, and favas are therefore cooked, buzz them until you get a puree. The fava beans cream is ready.

CARBONARA PREPARATION

Caramelize onion with a little olive oil, add some slices of cut pork cheek meat.Add the fava beans cream and some of the pasta water. Let cook for 2 minutes with high fire and pour the umbrichelli pasta (cook al dente).
Mix the whole in order to make the pasta creamy.
Put on plates, add Reggiano Parmesan cheese, some wild fenil and some black pepper.
It takes 10 minutes to prepare the TRATTORIA DEL MORO ARONNE Carbonara with fava beans and pork cheek meat!
